Zero Carb Pizza Crust
Love pizza but tired of the guilt after eating it? Look no further! This zero carb pizza crust will allow you to splurge without feeling any guilt. The most amazing part? You’ll be stuffed after a couple slices!
Ingredients
- Canned Chicken - 2
- Eggs - 2
- Parmesan Cheese - 1.5 C
- Onion Powder - 1 t
- Garlic Powder - 1 t
- Ranch Seasoning - 1 t
- Pam Cooking Spray
Directions
Preheat oven to 350 degrees
Spray large cookie sheet with Pam Cooking Spray
Drain & thoroughly rinse both canned chicken, then shred with a fork and lay on coated cookie sheet
Bake at 350 degrees for 12-15min until chicken starts to brown
Remove chicken from oven and place chicken in large mixing bowl. Mix chicken with 2 eggs, 1.5 cups parmesan cheese, and seasonings
Preheat the oven to 400 degrees
Respray cookie sheet with more Pam Cooking Spray
Once the mixture is thoroughly mixed, spread it onto coated cookie sheet and form into a thin pizza. The thinner the more crispy the crust will turn out
Bake at 400 degrees for 15-20min or until the crust turns golden brown
Remove from oven, and now you have a perfectly prepared zero carb pizza crust
Coat entire pizza with sauce of your choice and make sure to cover most of the edges as well so that the crust doesn’t burn
Top pizza with desired toppings
Bake for 5 minutes to melt the cheese
Remove pizza from oven and serve immediately

We generally try to eat healthy and cook at home, but we’ll occasionally go out for pizza if we’re tired of our local bars and grills, Chinese restaurants, and Mexican joints. With my diabetes and Jacob’s lactose intolerance, we’ve adjusted our eating habits and meals. One of our go-to meals is formed around this zero carb pizza crust - it doesn’t raise my blood sugar levels like traditional pizza crust does and it’s much easier to make than cauliflower pizza crust (and I can’t actually confirm nor deny that this pizza crust smells better than the cauliflower pizza crust).
Friends, I introduce to you the base of our go-to pizza crust - CANNED CHICKEN. Yes, I said it. Yuck, I know. I feel like I can already smell the canned chicken as I’m typing this. It’s way better than it sounds and smells, I promise. Somehow baking canned chicken with a few other zero carb ingredients can make for an incredibly satisfying & guiltless pizza crust. As for the toppings, we’ve experimented with quite a few pizza toppings including: pepperoni pizza, BBQ pork pizza, buffalo chicken pizza, supreme pizza, as well as the more simpler pizzas. We have yet to try an Alfredo pizza, but i’d be willing to bet that’d be delicious. As for the pizzas we have tried, pepperoni and supreme continue to rank in the top 2. Something about using actual red pizza sauce tricks our minds into believing we’re eating a delicious 1,500cal (and 100g Carb) pizza from Minsky’s or Pizza Shoppe.
This recipe is super simple; we make a double batch so that we can eat the leftovers the next day. All this crust takes is:
Canned Chicken - 2
Eggs - 2
Parmesan Cheese - 1.5C
Seasonings of your choice (I love onion & garlic powder + ranch)
Pam Cooking Spray
To get started, preheat oven to 350 degrees and while that’s preheating spray a large cookie sheet with Pam Cooking Spray. We’ve tried this with the non-stick silicone mat but prefer the Cooking Spray instead because it enables a more crisp pizza crust. Go ahead and drain both cans of chicken and try to rinse as best as possible to rid the smell and funk. Then shred the chicken with a fork and spread onto the coated cookie sheet. Bake for 12-15min to allow chicken to dry; remove from oven when chicken begins to brown.
Preheat oven to 400 degrees now so that it’s ready for the next portion.
In a large mixing bowl, combine the chicken that was just removed from the oven, 2 eggs, 1.5 C parmesan cheese, and seasonings. The purpose of the seasonings is to cover up the flavor of canned chicken. We’ve never used grilled chicken so I don’t know if that’ll work or not! Let us know if you try it with grilled chicken.
Once all ingredients are combined, respray the same large cookie sheet with the Pam Cooking Spray; spread the chicken mixture onto the cookie sheet and form it into whatever shape pizza you’d like. Tip: make it as thin as possible without leaving any gaps or holes so that it crisps up perfectly!
With the oven now preheated to 400 degrees, bake the “pizza crust” for 15-20min or until it’s golden brown. Pull out of the oven and your pizza crust is ready to use for pizza! Make sure that whatever sauce you use covers most of the pizza (including the crust) so that the edges don’t burn. Add any and all toppings of your choice and then put back into the oven so the cheese melts until your desired doneness (about 5min).
